About the Chef : Chef Will Lew is a culinary artist with a passion for sustainability. His culinary fire was lit from a young age watching his grandfather’s dedication as a chef in Chinatown. Chef Will has worked his way up in kitchens from washing dishes to running restaurants, carrying his trailblazing commitment to sustainability with him everywhere. This has been demonstrated by such accomplishments as pushing RawBar at The Fairmont Pacific Rim be the first sushi restaurant to use 100% Ocean Wise recommended sustainable seafood and also later being Ocean Wise’s Executive Chef. He has also lead restaurants such at Notch8 at the Fairmont Hotel Vancouver; Black + Blue and The Roof; Michelin-starred restaurant, Quanjude; and most recently Acrea, Alia, Bruno, and Cask at Club Versante.
In recent years, Chef Will has also paid homage to his heritage through a close collaboration with the Chinese Restaurant Awards, through which he celebrates cultural diversity and pride through food.
